Today, August  3rd, is National Watermelon Day! Most of us enjoy biting into a juicy, cool piece of watermelon. However, if your children had to choose between a slice of watermelon or a slice of pizza, which would they choose? Which would you prefer them to choose?

If we consider that watermelon is very low in calories and is an excellent source of vitamins A and C. Also, that it gives our body other nutrients such as lycopene, which can reduce the risk of some cancers and heart disease, most parents would prefer their child to choose watermelon.

We could make the choice easier for our children by offering them the opportunity to make their own watermelon pizza. Yes, watermelon pizza! Try making this colorful and delicious recipe with your children.

Sweet Watermelon Pizza

Ingredients

  • 1 watermelon round cut into 1″ (for cust)
  • Varied amount of shredded coconut
  • Varied amount of Greek yogurt of choice
  • Varied amount mint
  • Varied amount berries of choice (blueberries, strawberries, blackberries)
  • Varied amount slivered almonds

Instructions

  1. Spread yogurt to cover watermelon leaving room to hold the rind.
  2. Sprinkle watermelon pizza with coconut, mint, berries and almond toppings as desired.
