One of the great things about the holidays is there is usually plenty of leftovers, which can be a great thing if handled properly. Holiday meals often pack a high calorie punch so in the days after, try to do a little bit better to make up for the overeating we probably will all do today. First of all, remember that you can freeze a lot of those items, saving them for another time. Or you can share them with everyone who is attending your party by providing everyone with a to-go box so you are not left with all of the leftovers at your house. Remember that there are a lot of other meals you can make with your holiday leftovers besides just continually consuming the same stuff for days afterwards. Use that leftover turkey for a soup, wrap, fajitas, salad, etc. Makeover your leftovers in a completely new and interesting way. The Extension Office has a lot of different resources available for using your leftovers.

Leftovers Casserole

3 cups cooked whole grain pasta (macaroni, penne, spiral, etc.)

2 cups cooked and diced chicken, turkey, ham, beef or pork

2-3 cups sliced fresh zucchini or summer squash or mixed frozen vegetables

¼ cup chopped onion

1-2 cloves minced garlic

1-2 tsp mixed dried herbs (basil, thyme, oregano)

2 Tbsp grated Parmesan cheese

Combine ingredients in an oiled 2 ½ quart casserole dish. Cover and bake at 350 degrees for about 50 minutes to 1 hour.
