Cleveland County Extension & Community Association (ECA) got 2023 off to a busy start at their first quarterly County Council meeting on January 12. Members reviewed and approved their 2023 Plan of Work, which outlines several programs and projects in three committee areas.

A woman poses with groceries.Belwood ECA Club hosted a member recruitment event in conjunction with their March 14 meeting at the Belwood Community Center. Guests participated in the meeting, where Extension Family & Consumer Sciences Agent, Nancy Abasiekong, presented the program, “Plant-Based Eating for Better Health”.

A platter of fruit arranged to look like a butterfly.Club members prepared plant-based refreshments and shared some of their favorite plant-based recipes. A beautiful fruit butterfly tray with a yogurt dip was one of the featured dishes, along with Chickpea Salad Sandwiches, Texas (Cowboy) Caviar, Black Bean Dip, and Butter Pecan Cookies. This lesson will be followed up with a hands-on workshop later this spring, where members will prepare and sample additional plant-based and/or vegan recipes.

ECA members were excited that one new member joined Cleveland County ECA at this meeting.
