  • Baking Hacks - Grated fresh zucchini, carrots, or apples are ~85% liquid— 1 cup grated vegetable or fruit could replace about ¾ cup liquid in a recipe.
  • Top Baking Hack - Bake with fruits, herbs and vegetables harvested now. Grill asparagus, broccoli and scallions to wrap in crepes or flat bread recipes. Bake shortcake or rhubarb pie. Bake bagels for your next hike, bike or camping trip.

Never Been Easier Get together with your friends and share your favorite stories alongside a delicious brunch of Orange Cream Cheese Crepes made with “JIFFY” Baking Mix. Yields: Twelve 7" Crepes

Ingredients

Crepes

  • 2 cups “JIFFY” Baking Mix
  • 1½ cups milk
  • 2 eggs

Filling

  • 1 pkg. (8 oz) cream cheese, softened
  • 1/4 cup powdered sugar

Orange Sauce

  • 1/4 cup margarine or butter
  • 1/3 cup orange juice
  • 1/4 cup sugar
  • 1/2 tsp. vanilla extract
  • 1 tsp. orange zest

Directions

  1. Preheat pan or skillet over medium-high heat. Skillet is ready when a few drops of water sizzle and disappear from surface. Grease pan.
  2. Combine all ingredients in bowl. With wire whisk or fork, blend until all lumps are gone.
  3. Pour 1/4 cup batter onto pan; immediately tilt and turn the pan so the batter spreads evenly in a thin circle. Cook until bottom is lightly browned, about 1 minute. Flip and cook an additional 30 – 45 seconds. Remove from pan.
  4. For filling, combine ingredients. Blend until creamy. Spoon down center of crepe; roll up.
  5. For sauce, combine ingredients in saucepan. Whisk together over medium heat. Bring to a boil. Reduce heat and simmer 15 – 20 minutes. Drizzle over crepes.

The summer temperatures have arrived even though we are still a few weeks away from the official start of Summer. Summertime brings out different cooking techniques, such as using the grill, or using more portable burners while out camping. Be sure to harvest fresh fruits and vegetables from your garden and cook them using different cooking methods.

A Summer Reading Program will be conducted through July 28th at the Franklin County libraries in the Franklin County community libraries. Finales will be August 1-4. EFNEP will provide nutrition activities and food samples during the programs.

Cultivating Youth

Sizzling Summer Sessions offer face-to-face opportunities for youth ages 5-18 to actively create lasting summer memories through engaging fun and hands-on activities.

Franklin County 4-H youth, age 5 -18 years old, are invited to participate in the 10th Annual “FUN” Livestock Show to be conducted Friday, August 19, 2022, at Wildwynn Stables in Youngsville. Area youth who love animals and would like to be judged exhibiting their animals are encouraged to participate. The animals will be judged by three area expert livestock volunteers. The youth will be evaluated on showmanship knowledge and skills along with animal husbandry for their species of animal. Rabbits, Goats, Poultry, Cattle and Sheep can be shown.

26th Annual Franklin County Horse Farm Tour

The 26th Annual Franklin County Horse Farm Tour is set for Friday, August 5th in Louisburg. Learn the latest educational information along with learning directly from the Farm owners and N.C. Cooperative Extension experts. Everyone is excited to be a host farm this year! The tour will begin early in the morning and visit five stops this year.

N.C. Cooperative Extension of Franklin County Horticulture Agent, Colby Griffin was recently recognized with an Achievement Award by the North Carolina Association of County Agricultural Agents. Colby has been employed by N.C. Cooperative Extension of Franklin County for almost five years and is the Horticulture Agent for Franklin County.

Congratulations to our summer intern, Leila Noufal for being awarded her FFA State Degree. The State Degree requires the awardee to exhibit hard work, dedication, and leadership, just as she has during her time at the Franklin County Extension Center. Good luck on your quest to earn the FFA American Degree.
