During this time of year, we often have a lot of colder, in climate weather that we need to be prepared for those winter storms and disasters. However, as many start exercising more this time of year, we want to make sure you are prepared for this colder weather. When exposed to cold temperatures, your body begins to lose heat faster than its produced. So be sure to dress in layers so that you can remove or put back on any layers to stay warm. You want to start with a thin layer of synthetic material to help draw sweat away from your body. Be sure to wear appropriate footwear to keep your feet warm and dry, especially if there is wet weather. Make sure you can be seen by oncoming traffic if you are walking late at night or early in the morning. And drink plenty of water. The cold diminishes our thirst by up to 40% and we can get dehydrated without realizing it. These are just a few tips from the University of Georgia Extension to help you be prepared this winter season.

Winter Vegetable Soup – serves 8

via OSU Extension

1 Tbsp canola oil

1 cup chopped onion

1 clove garlic, finely chopped

½ cup thinly sliced celery

1 can diced tomatoes

1 cup sliced carrots

1 cup diced potato

2 cups frozen peas

2 cups frozen corn

2 cups frozen lima beans

¼ tsp pepper

1 bay leaf

½ tsp dried basil

¼ tsp dill seed

7 cups fat-free, reduced sodium chicken broth

Heat oil in a large saucepan, over medium heat. Sauté onion and celery until light golden, about 6 minutes. Add garlic during last minute. Add remaining ingredients. Cook 1 hour, stirring occasionally, until vegetables are tender and flavors blend. Remove bay leaf. Adjust seasoning if needed.
